Instructions
- Prepare the apples: Peel and dice the apples into small ½-inch pieces. Toss them in a small amount of flour to coat them. Set aside.
- Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, sugar, and salt.
- Combine wet ingredients: In a separate bowl, whisk together the eggs, milk, and vanilla extract.
- Make the batter: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold the diced apples into the batter.
- Heat oil: Heat oil in a deep pan or fryer to 350°F (175°C). The oil should be deep enough to submerge the fritter bites.
- Fry the fritters: Drop spoonfuls of the batter into the hot oil, frying in batches. Cook for about 2-3 minutes per side, or until golden brown and crispy. Remove fritters from the oil and drain on a paper towel-lined plate.
- Make the glaze (optional): While the fritters are cooling slightly, mix together powdered sugar, milk, vanilla extract, and a pinch of salt in a small bowl until smooth.
- Coat with cinnamon sugar (optional): In a small bowl, mix together sugar and cinnamon. Once the fritters are slightly cooled, roll them in the cinnamon sugar mixture for extra flavor.
- Serve: Drizzle the fritters with the glaze (if using) or serve as is. Enjoy warm!
