Instructions

  • Prepare the apples: Peel and dice the apples into small ½-inch pieces. Toss them in a small amount of flour to coat them. Set aside.
  • Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, sugar, and salt.
  • Combine wet ingredients: In a separate bowl, whisk together the eggs, milk, and vanilla extract.
  • Make the batter: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold the diced apples into the batter.
  • Heat oil: Heat oil in a deep pan or fryer to 350°F (175°C). The oil should be deep enough to submerge the fritter bites.
