- 4 slices of thick-cut bread (like brioche or challah)
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon sugar
- 1 tablespoon butter (for cooking)
- 1 cup apple pie filling (store-bought or homemade)
- Powdered sugar (for dusting)
- Maple syrup (for serving)
Instructions
- In a medium-sized mixing bowl, crack the 2 large eggs and whisk until well beaten.
- Add 1/2 cup of milk to the eggs and mix well.
- Pour in 1 teaspoon of vanilla extract and stir to combine.
- Sprinkle in 1 teaspoon of ground cinnamon and 1/4 teaspoon of nutmeg, mixing until smooth.
- Add 1 tablespoon of sugar to the mixture and whisk until well combined. Set aside.
- Lay out the 4 slices of thick-cut bread on a clean surface. Optionally, lightly toast the bread for a minute or two.
- Dip each slice into the egg mixture, coating both sides thoroughly. Let it soak for about 10-15 seconds on each side.
- Place the soaked bread slices on a plate or baking sheet.
- Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter, swirling to coat the pan.
- Carefully place the soaked bread slices onto the skillet, cooking 2 slices at a time.
- Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes on the other side.
- Transfer the cooked French toast to a plate and cover with aluminum foil to keep warm.
- To assemble, take one slice of French toast and place it on a serving plate.
- Spoon about 1/4 cup of apple pie filling on top. Optionally, sprinkle with additional cinnamon.
- Place another slice of French toast on top, creating a sandwich. Repeat for remaining slices.
- Dust the top with powdered sugar for presentation.
- Serve warm, drizzled with maple syrup. Add whipped cream or vanilla ice cream for an extra treat.
