Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the applesauce, granulated sugar, brown sugar, and vegetable oil. Whisk until smooth.
- Add the eggs one at a time, whisking after each addition. Then mix in the vanilla extract.
- In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture in three parts, mixing gently until just combined.
- Fold in the walnuts or pecans and raisins if using.
- Grease and flour a 9×13 inch baking pan or line it with parchment paper.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, checking for doneness with a toothpick.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat together cream cheese, softened butter, powdered sugar, and vanilla until smooth. Spread over the cooled cake.
- Slice the cake into squares or rectangles and serve. Dust with powdered sugar if desired.
- Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Freeze for longer storage.
