Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the applesauce, granulated sugar, brown sugar, and vegetable oil. Whisk until smooth.
  3. Add the eggs one at a time, whisking after each addition. Then mix in the vanilla extract.
  4. In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture in three parts, mixing gently until just combined.
  6. Fold in the walnuts or pecans and raisins if using.
