- 8 ounces elbow macaroni
- 4 slices of bacon, chopped
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 teaspoon Dijon mustard

- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup breadcrumbs (for topping)
- 2 tablespoons olive oil (for breadcrumbs)
Instructions
- Bring a large pot of salted water to a boil. Add about a tablespoon of salt.
- Cook the elbow macaroni according to package instructions until al dente (7-8 minutes). Stir occasionally.
- Drain the macaroni and set aside. Rinsing with cold water is optional.
- In a large skillet over medium heat, cook the chopped bacon until crispy (5-7 minutes), stirring occasionally.
- Transfer the crispy bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the skillet.
- In the same skillet, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes to create a roux.
- Gradually whisk in the whole milk until smooth and thickened (3-5 minutes).
- Stir in Dijon mustard, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
- Reduce heat to low and add shredded cheddar and mozzarella cheeses, stirring until melted and smooth.
- Fold in the cooked macaroni and crispy bacon until well combined.
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Pour the macaroni and cheese mixture into the prepared dish, spreading evenly.
- In a small bowl, mix breadcrumbs with olive oil until evenly coated. Sprinkle over the macaroni and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
- Let cool for 5-10 minutes before serving.
- Serve warm, garnished with fresh parsley or chives if desired. Pair with a side salad or steamed vegetables.
