  • 1 cup heavy whipping cream
  • 2 ripe bananas, mashed
  • 2 ripe bananas, sliced
  • 1 cup banana pudding mix
  • 2 cups milk
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings or banana slices for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until the crumbs are well coated and the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust in the preheated oven for about 8-10 minutes, or until it’s lightly golden. Remove it from the oven and let it cool completely.
  5. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy (about 2-3 minutes).
  6. Add the powdered sugar and vanilla extract to the cream cheese and beat until fully combined.
  7. In a separate bowl, whip the heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture, then fold in the mashed bananas.
  9. Pour the cheesecake filling over the cooled crust in the springform pan and smooth the top.
  10. Prepare the banana pudding according to package instructions using the 2 cups of milk. Let it sit until thickened.
  11. Layer the sliced bananas evenly over the cheesecake filling.
  12. Pour the prepared banana pudding over the sliced bananas, spreading it evenly.
  13. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
  14. Whip the heavy cream for the topping with powdered sugar and vanilla extract until stiff peaks form.
  15. Carefully remove the sides of the springform pan and spread the whipped cream topping over the banana pudding layer.
  16. Garnish with chocolate shavings or banana slices if desired.
  17. Slice the cheesecake into wedges using a sharp knife and serve chilled.
