- 1 pound boneless, skinless chicken breasts
- 1 cup barbecue sauce (your favorite brand)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 red bell pepper, cut into bite-sized pieces
- 1 yellow bell pepper, cut into bite-sized pieces
- 1 medium red onion, cut into wedges
- 1 zucchini, sliced into half-moons
- 1 cup cherry tomatoes
- 4 cups mixed salad greens (such as romaine, spinach, and arugula)
- 1 avocado, sliced
- 1/4 cup crumbled feta cheese (optional)
- Fresh cilantro or parsley for garnish
Instructions
- Cut the chicken breasts into 1-inch cubes. In a large bowl, combine the barbecue sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well. Add the cubed chicken to the marinade, ensuring each piece is well-coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- While the chicken marinates, cut the red and yellow bell peppers into bite-sized pieces, and cut the red onion into wedges. Slice the zucchini into half-moons and set aside. If using wooden skewers, soak them in water for about 30 minutes.
- Once marinated, thread a piece of chicken onto a skewer, followed by a piece of red bell pepper, yellow bell pepper, a wedge of red onion, and a slice of zucchini. Repeat until the skewer is filled, leaving space at the ends. Continue until all ingredients are used, yielding about 6-8 skewers.
- Preheat your grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F/75°C). If using a grill pan, cook for about 8-10 minutes, turning halfway. For baking, place on a baking sheet and bake at 400°F (200°C) for 15-20 minutes, turning halfway.
- In a large bowl, combine mixed salad greens, cherry tomatoes, and sliced avocado. Optionally, drizzle with olive oil and lemon juice, then toss gently. If using feta cheese, sprinkle it on top.
- Once the skewers are cooked, let them rest for a few minutes. Serve by placing a generous portion of the salad on each plate, then carefully remove the skewers and place them on top. Garnish with fresh cilantro or parsley.
