  • 1 pound ground beef (80/20 blend is great for flavor)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely diced
  • 1 (8 ounce) can water chestnuts, drained and finely chopped
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (adjust to your spice preference)
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 1 head of butter lettuce, leaves separated and washed
  • Optional toppings: chopped peanuts, sriracha, sesame seeds, green onions

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion and garlic to the skillet with the browned beef. Cook for about 3-5 minutes, or until the onion is softened and translucent.
  3. Add the diced red bell pepper and water chestnuts to the skillet. Cook for another 3-5 minutes, or until the bell pepper is slightly softened.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, ground ginger, and red pepper flakes.
  5. Pour the sauce over the beef and vegetable mixture in the skillet. Stir well to ensure everything is evenly coated. Bring the mixture to a simmer and cook for about 5-7 minutes, or until the sauce has thickened slightly and the flavors have melded together. Stir occasionally to prevent sticking.
  6. Stir in the chopped fresh cilantro. Reserve some cilantro for garnish later.
  7. Gently separate the leaves of the butter lettuce head. Wash and dry them thoroughly.
  8. Spoon the beef mixture into the lettuce cups.
  9. Garnish with chopped peanuts, sriracha, sesame seeds, green onions, and extra cilantro, if desired.
  10. Serve the lettuce wraps immediately while the beef mixture is still warm and the lettuce is crisp.
