Instructions

  1. Mash the black beans in a large mixing bowl with a fork or potato masher, leaving some chunks for texture.
  2. Stir in the cooked quinoa to add protein and help bind the mixture.
  3. Add the finely chopped onion, minced garlic, grated carrots, and corn. Mix until well combined.
  4. Sprinkle in the breadcrumbs, soy sauce, ground cumin, smoked paprika, chili powder, salt, and pepper. Mix thoroughly and taste to adjust seasoning.
  5. Shape the mixture into 4 to 6 patties, wetting your hands slightly to prevent sticking.
