Ingredients

Scale

For the Biscuit Crust

  • 1 can of refrigerated biscuit dough (or 1 batch of homemade biscuit dough)
  • 1 tablespoon butter (optional, for greasing)

For the Sausage Gravy

  • 1 pound breakfast sausage
  • ¼ cup all-purpose flour
  • 2 cups milk (whole milk or plant-based alternative)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • ¼ teaspoon cayenne pepper (optional, for extra heat)

For the Pizza Toppings

  • 1 to cups shredded cheddar cheese
  • 1 to cups shredded mozzarella cheese
  • Fresh herbs for garnish (parsley, chives, or thyme)
  • Optional: 2-3 eggs (for topping, optional, to be added before baking)

Instructions

  1. Preheat the oven to 400°F (200°C). If you’re using homemade biscuit dough, roll it out on a floured surface to ½-inch thickness. If using canned biscuit dough, separate the biscuits and press them into a pizza pan or baking sheet to form a crust.
  2. Bake the biscuit dough for 10-12 minutes until it is lightly golden and fully cooked through. While the dough is baking, prepare the sausage gravy.
  3. Cook the sausage in a large skillet over medium heat, breaking it up into small crumbles. Let the sausage brown and cook thoroughly, about 5-7 minutes.
  4. Make the gravy: Once the sausage is fully cooked, sprinkle the flour over the sausage and cook for 1-2 minutes to eliminate the raw flour taste. Gradually add the milk, stirring constantly to avoid lumps. Let the gravy simmer for 5-7 minutes, stirring occasionally, until it thickens. Season with salt, pepper, and cayenne pepper (if using).
  5. Assemble the pizza: Spread the sausage gravy evenly over the baked biscuit crust. Sprinkle shredded cheddar and mozzarella cheese generously over the gravy.
  6. Optional eggs: If using eggs, crack them directly onto the pizza at this point. You can either bake them sunny side up or scramble them and add them after baking, depending on your preference.
  7. Bake the pizza for an additional 8-10 minutes, or until the cheese is melted and bubbly, and the eggs (if added) are cooked to your liking.
  8. Garnish and serve: After baking, let the pizza cool for a few minutes. Garnish with fresh herbs like parsley or chives before slicing and serving.

Notes

  • Eggs: For a fun twist, you can add scrambled eggs to the pizza after baking, or bake them directly onto the pizza for a sunny-side-up effect.
  • Vegetarian Option: Substitute the sausage with plant-based breakfast sausage or sautéed vegetables like mushrooms, spinach, or bell peppers for a veggie version.
  • Gluten-Free Option: Use gluten-free biscuit dough or a gluten-free pizza crust for a gluten-free alternative.
