- 1 cup crumbled feta cheese
- 1/2 cup walnuts, roughly chopped
- 1/4 cup red onion, thinly sliced

Instructions
- Rinse the fresh spinach leaves under cold water and dry them using a salad spinner or a clean kitchen towel.
- Rinse the blueberries gently under cold water in a colander and let them drain completely.
- Slice the ripe peaches into thin wedges or bite-sized pieces.
- Roughly chop the walnuts. Optionally, toast them in a dry skillet over medium heat for about 5 minutes until golden and fragrant.
- Thinly slice the red onion. Soak in cold water for 10 minutes if you prefer a milder flavor, then drain and pat dry.
- In a large salad bowl, add the washed spinach leaves.
- Gently add the blueberries and sliced peaches, scattering them evenly over the spinach.
- Sprinkle the crumbled feta cheese over the salad.
- Toss in the chopped walnuts and sliced red onion.
- Pour the balsamic vinaigrette dressing over the salad, starting with half and adding more to taste.
- Sprinkle salt and pepper over the salad, then toss gently to combine.
- Adjust the dressing or seasoning as needed for balanced flavors.
- Serve the salad onto individual plates or bowls, ensuring a good mix of ingredients in each serving.
- Garnish with fresh mint leaves for added color and flavor.
- Best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator.
