  • 2 cups fresh blueberries
  • 2 ripe peaches, sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette dressing
  • Salt and pepper to taste
  • Optional: fresh mint leaves for garnish

Instructions

  1. Rinse the fresh spinach leaves under cold water and dry them using a salad spinner or a clean kitchen towel.
  2. Rinse the blueberries gently under cold water in a colander and let them drain completely.
  3. Slice the ripe peaches into thin wedges or bite-sized pieces.
  4. Roughly chop the walnuts. Optionally, toast them in a dry skillet over medium heat for about 5 minutes until golden and fragrant.
  5. Thinly slice the red onion. Soak in cold water for 10 minutes if you prefer a milder flavor, then drain and pat dry.
  6. In a large salad bowl, add the washed spinach leaves.
  7. Gently add the blueberries and sliced peaches, scattering them evenly over the spinach.
  8. Sprinkle the crumbled feta cheese over the salad.
  9. Toss in the chopped walnuts and sliced red onion.
  10. Pour the balsamic vinaigrette dressing over the salad, starting with half and adding more to taste.
  11. Sprinkle salt and pepper over the salad, then toss gently to combine.
  12. Adjust the dressing or seasoning as needed for balanced flavors.
  13. Serve the salad onto individual plates or bowls, ensuring a good mix of ingredients in each serving.
  14. Garnish with fresh mint leaves for added color and flavor.
