Ingredients

Scale
  • 1 cup of tapioca flour (also known as tapioca starch)
  • 1/2 cup of milk
  • 1/4 cup of vegetable oil or melted butter
  • 1 large egg
  • 1 cup of grated cheese (traditionally, a mix of Parmesan and mozzarella is used)
  • 1 teaspoon of salt
  • 1/2 teaspoon of baking powder (optional, for a lighter texture)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, combine the milk and vegetable oil (or melted butter). Heat over medium until it simmers, stirring occasionally.
  3. Remove from heat and gradually add the tapioca flour, stirring continuously until thick and sticky.
  4. Allow the mixture to cool for 5-10 minutes.
  5. Add the egg and salt, mixing until smooth. A hand mixer can be used for ease.
  6. Fold in the grated cheese until evenly distributed.
  7. If using, add baking powder and mix until just combined.
  8. Grease a mini or regular muffin tin with cooking spray or oil. Alternatively, line with paper liners.
  9. Fill each muffin cup about 3/4 full with the batter.
  10. Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick comes out clean.
  11. Let cool for 5 minutes before removing from the tin. Use a knife to loosen the edges if necessary.
  12. Transfer to a wire rack to cool completely.
  13. Serve warm or at room temperature.
  14. Optional: Pair with a dipping sauce like spicy aioli or tangy salsa.
  15. Store in an airtight container for up to 2 days or freeze for longer storage.
  16. Customize with herbs or spices for added flavor.

Notes

  • For a lighter texture, consider using baking powder.
  • Feel free to experiment with different cheese combinations or add spices to the batter for a unique twist.
