- 1/2 cup of milk
- 1/4 cup of vegetable oil or melted butter
- 1 large egg
- 1 cup of grated cheese (traditionally, a mix of Parmesan and mozzarella is used)
- 1 teaspoon of salt
- 1/2 teaspoon of baking powder (optional, for a lighter texture)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, combine the milk and vegetable oil (or melted butter). Heat over medium until it simmers, stirring occasionally.
- Remove from heat and gradually add the tapioca flour, stirring continuously until thick and sticky.
- Allow the mixture to cool for 5-10 minutes.
- Add the egg and salt, mixing until smooth. A hand mixer can be used for ease.
- Fold in the grated cheese until evenly distributed.
- If using, add baking powder and mix until just combined.
- Grease a mini or regular muffin tin with cooking spray or oil. Alternatively, line with paper liners.
- Fill each muffin cup about 3/4 full with the batter.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick comes out clean.
- Let cool for 5 minutes before removing from the tin. Use a knife to loosen the edges if necessary.
- Transfer to a wire rack to cool completely.
- Serve warm or at room temperature.

- Store in an airtight container for up to 2 days or freeze for longer storage.
