- 1 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 2 cups powdered sugar
- 2 cups graham cracker crumbs
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a large mixing bowl, combine the softened butter and creamy peanut butter. Using an electric mixer, beat them together on medium speed until the mixture is smooth and creamy (about 2-3 minutes).
- Gradually add in the powdered sugar and graham cracker crumbs, mixing on low speed until well combined.
- Add the vanilla extract and mix until evenly distributed.
- Press the peanut butter mixture evenly into the bottom of a greased 9×13 inch baking dish, packing it tightly.
- Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 30 minutes.
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil.
- Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Let it cool for a few minutes.
- Remove the chilled peanut butter base from the refrigerator.
- Pour the melted chocolate mixture over the peanut butter layer and spread it evenly with a spatula.
- Tap the baking dish gently on the counter to remove air bubbles.
- Return to the refrigerator and chill for at least 1 hour, or until the chocolate is set.
- Once set, remove the baking dish from the refrigerator and cut into squares or rectangles.
- For clean edges, run a knife under hot water, dry it off, and then cut.
- Serve immediately or store in an airtight container in the refrigerator for up to a week.
