- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup buffalo sauce (adjust to taste)
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 cup shredded mozzarella cheese
- 4 hoagie rolls or sub sandwich rolls
- Butter for toasting the rolls
Instructions
- Cut the chicken breasts into smaller pieces for easier cooking and shredding.
- In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.
- Add the chicken pieces and toss to coat. Let marinate for at least 15 minutes, or up to an hour in the refrigerator.
- Heat a large skillet over medium-high heat.
- Add the marinated chicken and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Remove from skillet and let rest for a few minutes before shredding with two forks or chopping into bite-sized pieces.
- In the same skillet, add buffalo sauce to the shredded chicken and stir to combine. Heat through for 2-3 minutes.
- If needed, add more olive oil to the skillet.
- Sauté sliced onions and green bell peppers over medium heat for 5-7 minutes until soft and slightly caramelized. Stir occasionally.
- Add the buffalo chicken back into the skillet with the sautéed onions and peppers. Mix well and cook for another 2-3 minutes.
- Preheat the oven to 350°F (175°C).
- Slice hoagie rolls lengthwise without cutting all the way through.
- Butter the insides of each roll.
- Place on a baking sheet and toast in the oven for 5-7 minutes until golden and crispy.
- Spoon the buffalo chicken mixture into each toasted roll and top with shredded mozzarella cheese.
- For extra melty cheese, return the sandwiches to the oven for an additional 2-3 minutes.
- Remove from the oven and serve hot. Garnish with additional buffalo sauce, ranch dressing, blue cheese crumbles, or fresh herbs if desired.
- Pair with crispy fries, salad, or celery sticks.
