  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup buffalo sauce (adjust to taste)
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 4 hoagie rolls or sub sandwich rolls
  • Butter for toasting the rolls

Instructions

  1. Cut the chicken breasts into smaller pieces for easier cooking and shredding.
  2. In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.
  3. Add the chicken pieces and toss to coat. Let marinate for at least 15 minutes, or up to an hour in the refrigerator.
  4. Heat a large skillet over medium-high heat.
  5. Add the marinated chicken and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  6. Remove from skillet and let rest for a few minutes before shredding with two forks or chopping into bite-sized pieces.
  7. In the same skillet, add buffalo sauce to the shredded chicken and stir to combine. Heat through for 2-3 minutes.
  8. If needed, add more olive oil to the skillet.
  9. Sauté sliced onions and green bell peppers over medium heat for 5-7 minutes until soft and slightly caramelized. Stir occasionally.
  10. Add the buffalo chicken back into the skillet with the sautéed onions and peppers. Mix well and cook for another 2-3 minutes.
  11. Preheat the oven to 350°F (175°C).
  12. Slice hoagie rolls lengthwise without cutting all the way through.
  13. Butter the insides of each roll.
  14. Place on a baking sheet and toast in the oven for 5-7 minutes until golden and crispy.
  15. Spoon the buffalo chicken mixture into each toasted roll and top with shredded mozzarella cheese.
  16. For extra melty cheese, return the sandwiches to the oven for an additional 2-3 minutes.
  17. Remove from the oven and serve hot. Garnish with additional buffalo sauce, ranch dressing, blue cheese crumbles, or fresh herbs if desired.
  18. Pair with crispy fries, salad, or celery sticks.
