Instructions

  1. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  2. Pound the chicken breasts to an even thickness of about 1 inch using a meat mallet or rolling pin.
  3. In a small bowl, mix Cajun seasoning with a pinch of salt and pepper. Rub this mixture evenly over both sides of the chicken breasts.
  4. Heat olive oil and butter in a large skillet over medium-high heat until the butter is melted and bubbling.
  5. Add the seasoned chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken and set aside.
  6. In the same skillet, add diced onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until softened and the onion is translucent.
  7. Add minced garlic and cook for an additional 1-2 minutes, stirring frequently.
  8. Pour in chicken broth and scrape the bottom of the skillet to deglaze.
  9. Stir in diced tomatoes, heavy cream, dried thyme, and smoked paprika. Mix well.
  10. Bring to a gentle simmer and cook for about 5 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper.
  11. Return the cooked chicken to the skillet, nestling it into the sauce. Spoon sauce over the chicken.
  12. Cover and let simmer for an additional 5-10 minutes to meld flavors and heat the chicken through.
  13. Remove from heat and garnish with freshly chopped parsley.
