- 4 large croissants
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced onions
- 1/4 cup milk
- Salt and pepper to taste
- 2 tablespoons butter
- Optional: cooked bacon or sausage for added protein
- Fresh herbs (like chives or parsley) for garnish
Instructions
- Crack the 4 large eggs into a medium-sized mixing bowl.
- Add 1/4 cup of milk to the eggs for fluffiness.
- Season with salt and pepper to taste (about 1/2 teaspoon salt and a pinch of pepper).
- Whisk until well combined and slightly frothy (1-2 minutes).
- Chop 1/2 cup of diced bell peppers and 1/2 cup of diced onions.
- If using, chop cooked bacon or sausage into small pieces.
- In a large skillet, melt 2 tablespoons of butter over medium heat until bubbling.
- Add the diced onions and bell peppers; sauté for 3-4 minutes until soft and fragrant.
- Pour the egg mixture into the skillet, stirring gently with a spatula.
- Cook for 5-7 minutes, stirring occasionally, until eggs are just set but still creamy. Fold in bacon or sausage during the last minute if using.
- Sprinkle 1 cup of shredded cheddar cheese over the cooked eggs and stir gently to incorporate.
- Remove from heat and let sit for a minute to allow the cheese to melt.
- Preheat the oven to 350°F (175°C).
- Slice the croissants in half horizontally, being careful not to cut all the way through.
- Place the croissant halves cut side up on a baking sheet. Optionally, spread a little butter on the cut sides.
- Spoon a generous amount of the cheesy egg mixture onto the bottom half of each croissant.
- If desired, sprinkle chopped fresh herbs over the egg mixture.
- Place the top half of the croissant over the filling and press down gently.
- Bake the assembled sandwiches in the preheated oven for 5-7 minutes, or until warm and slightly crispy.
- Keep an eye on them to ensure they dont get too brown.
- Remove from the oven and let cool for a minute before serving.
