  • 1 cup all-purpose flour

  • 1 cup buttermilk
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 tablespoon fresh chives, chopped (optional)
  • Vegetable oil for frying

Instructions

  1. Peel the onions and cut off the tops and bottoms. Slice them in half from top to bottom.
  2. Remove the inner layers, leaving about 1/4 inch of the outer layer intact to create hollow rings. Set aside the inner layers for another use.
  3. You should have 8 onion rings (2 from each onion).
  4. In a mixing bowl, combine shredded mozzarella, shredded cheddar, and softened cream cheese. Mix until well combined.
  5. If using chives, add them to the cheese mixture and stir until evenly distributed.
  6. Fill each hollow onion ring with the cheese mixture, packing it tightly.
  7. In a large bowl, combine all-purpose flour, baking powder, garlic powder, paprika, salt, and black pepper. Whisk together.
  8. Gradually add buttermilk, whisking until you achieve a smooth batter.
  9. Place breadcrumbs in a shallow dish.
  10. Dip each stuffed onion ring into the batter, allowing excess to drip off.
  11. Roll in breadcrumbs, pressing gently to adhere. Repeat for all rings.
  12. Heat vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
  13. Fry a few onion rings at a time, about 3-4 minutes on each side, until golden brown and crispy.
  14. Remove and drain on paper towels. Repeat with remaining rings.
  15. Transfer fried onion rings to a serving platter.
  16. Garnish with additional chopped chives or parsley if desired.
  17. Serve hot with your favorite dipping sauces.
