- 4 large onions
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup buttermilk
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1 tablespoon fresh chives, chopped (optional)
- Vegetable oil for frying
Instructions
- Peel the onions and cut off the tops and bottoms. Slice them in half from top to bottom.
- Remove the inner layers, leaving about 1/4 inch of the outer layer intact to create hollow rings. Set aside the inner layers for another use.
- You should have 8 onion rings (2 from each onion).
- In a mixing bowl, combine shredded mozzarella, shredded cheddar, and softened cream cheese. Mix until well combined.
- If using chives, add them to the cheese mixture and stir until evenly distributed.
- Fill each hollow onion ring with the cheese mixture, packing it tightly.
- In a large bowl, combine all-purpose flour, baking powder, garlic powder, paprika, salt, and black pepper. Whisk together.
- Gradually add buttermilk, whisking until you achieve a smooth batter.
- Place breadcrumbs in a shallow dish.
- Dip each stuffed onion ring into the batter, allowing excess to drip off.
- Roll in breadcrumbs, pressing gently to adhere. Repeat for all rings.
- Heat vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
- Fry a few onion rings at a time, about 3-4 minutes on each side, until golden brown and crispy.
- Remove and drain on paper towels. Repeat with remaining rings.
- Transfer fried onion rings to a serving platter.
- Garnish with additional chopped chives or parsley if desired.
- Serve hot with your favorite dipping sauces.
