- 1 cup cherry pie filling
- 10 egg roll wrappers
- 1 egg, beaten (for sealing the wrappers)
- Oil for frying (vegetable or canola)
- Powdered sugar for dusting (optional)
Instructions
- In a medium-sized mixing bowl, add 1 cup of softened cream cheese. Ensure it is at room temperature for a smooth mixture.
- Sprinkle in 1/2 cup of powdered sugar to add sweetness and balance the tanginess of the cream cheese.
- Add 1 teaspoon of vanilla extract for flavor.
- Blend the cream cheese, powdered sugar, and vanilla extract together with a hand mixer or whisk until smooth and creamy, about 2-3 minutes.
- Gently fold in 1 cup of cherry pie filling.
- Lay one egg roll wrapper on a clean, flat surface with one corner pointing towards you (diamond shape).
- Place about 2 tablespoons of the cherry cheesecake filling in the center of the wrapper, keeping it away from the edges.
- Dip your finger into the beaten egg and run it along the edges of the wrapper to help seal it.
- Fold the bottom corner of the wrapper over the filling, tucking it in slightly. Fold in the sides and roll it up tightly, sealing the top corner. Repeat for all egg rolls.
- In a large, deep skillet or pot, pour enough oil to cover the bottom by about 1-2 inches. Heat the oil over medium heat until it reaches about 350°F (175°C).
- Carefully place a few egg rolls into the hot oil, frying them for about 2-3 minutes on each side until golden brown and crispy.
- Use a slotted spoon to remove the egg rolls from the oil and place them on a plate lined with paper towels to drain excess oil.
- Let the egg rolls cool for a few minutes before serving.
- Dust with powdered sugar for a touch of sweetness and beautiful presentation.
- Serve with a side of whipped cream or a drizzle of chocolate sauce for dipping.
- Store any leftovers in an airtight container in the fridge and reheat in the oven to regain crispiness.
