- 1 teaspoon salt

- 2 cups biscuit mix

Instructions
- In a large mixing bowl, combine the shredded cooked chicken and frozen mixed vegetables. Ensure the vegetables are evenly distributed throughout the chicken.
- Add the cream of chicken soup and chicken broth to the bowl. Stir until the chicken and vegetables are well coated with the soup mixture.
- Season the mixture with garlic powder, onion powder, dried thyme, salt, and black pepper. Mix thoroughly to ensure all ingredients are well combined.
- Transfer the chicken and vegetable mixture into a greased 9×13 inch baking dish, spreading it evenly across the bottom.
- In a separate mixing bowl, combine the biscuit mix and milk. Stir gently until just combined, being careful not to overmix.
- If using cheddar cheese, fold it into the batter for added flavor.
- Using a spoon or cookie scoop, drop spoonfuls of the dumpling batter over the chicken and vegetable mixture in the baking dish, leaving space between each dumpling.
- Preheat your oven to 375°F (190°C).
- Cover the baking dish with aluminum foil to help steam the dumplings.
- Bake the casserole in the preheated oven for 25 minutes.
- After 25 minutes, carefully remove the foil and return the uncovered casserole to the oven. Bake for an additional 15-20 minutes, or until the dumplings are golden brown and cooked through.
- Once the casserole is done baking, let it cool for about 5-10 minutes.
- Scoop out portions of the casserole, ensuring each serving includes both the chicken and dumplings.
- Garnish with freshly chopped parsley if desired.
