  • 1 teaspoon dried thyme

  • 1 cup milk
  • 2 cups biscuit mix

Instructions

  1. In a large mixing bowl, combine the shredded cooked chicken and frozen mixed vegetables. Ensure the vegetables are evenly distributed throughout the chicken.
  2. Add the cream of chicken soup and chicken broth to the bowl. Stir until the chicken and vegetables are well coated with the soup mixture.
  3. Season the mixture with garlic powder, onion powder, dried thyme, salt, and black pepper. Mix thoroughly to ensure all ingredients are well combined.
  4. Transfer the chicken and vegetable mixture into a greased 9×13 inch baking dish, spreading it evenly across the bottom.
  5. In a separate mixing bowl, combine the biscuit mix and milk. Stir gently until just combined, being careful not to overmix.
  6. If using cheddar cheese, fold it into the batter for added flavor.
  7. Using a spoon or cookie scoop, drop spoonfuls of the dumpling batter over the chicken and vegetable mixture in the baking dish, leaving space between each dumpling.
  8. Preheat your oven to 375°F (190°C).
  9. Cover the baking dish with aluminum foil to help steam the dumplings.
  10. Bake the casserole in the preheated oven for 25 minutes.
  11. After 25 minutes, carefully remove the foil and return the uncovered casserole to the oven. Bake for an additional 15-20 minutes, or until the dumplings are golden brown and cooked through.
