  • 2 large eggs
  • 1/4 cup milk
  • Vegetable oil (for frying)
  • 1 cup milk (for gravy)
  • 1/4 cup all-purpose flour (for gravy)

Instructions

  1. Tenderize the cube steaks by placing them between plastic wrap and pounding to about 1/2 inch thick. Season with salt and pepper, and let sit for 15 minutes.
  2. In a shallow dish, mix 1 cup flour, salt, black pepper, garlic powder, onion powder, and cayenne pepper. In another bowl, whisk together eggs and 1/4 cup milk.
  3. Dredge each steak in the seasoned flour, dip in the egg wash, and then return to the flour for a second coating. Place on a clean plate.
  4. Heat vegetable oil in a skillet over medium-high heat until it reaches 350°F. Fry the breaded steaks for 3-4 minutes on each side until golden brown. Drain on paper towels and keep warm.
  5. Pour out most of the oil, leaving 2-3 tablespoons. Whisk in 1/4 cup flour to create a roux, cooking for 1-2 minutes. Gradually add 1 cup milk while whisking until thickened. Season with salt and pepper.
  6. Serve the crispy cube steaks hot, topped with gravy.
