- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 cup olive oil
- 1 cup sliced mushrooms
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 tablespoon lemon juice
Instructions
- Start by placing the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
- In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
- Dredge each chicken breast in the flour mixture, coating both sides thoroughly. Shake off excess flour and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be no longer pink.
- Remove the chicken from the skillet and cover loosely with aluminum foil to keep warm.
- In the same skillet, add the sliced mushrooms and sauté for about 3-4 minutes until tender.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- After simmering for 2-3 minutes, reduce heat to low and stir in the heavy cream. Simmer gently for another 5 minutes, stirring occasionally.
- Add the grated Parmesan cheese to the sauce, stirring until melted and slightly thickened. Adjust consistency with more chicken broth if needed.
- Stir in the lemon juice and season with additional salt and pepper to taste.
- To serve, place a chicken breast on each plate and spoon the creamy mushroom sauce over the top, including plenty of mushrooms.
- Garnish with freshly chopped parsley for added flavor and presentation.
Notes
- For extra flavor, consider marinating the chicken in olive oil, lemon juice, garlic, and herbs before cooking.
- For a lighter version, substitute half-and-half for the heavy cream.
