  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 cup olive oil
  • 1 cup sliced mushrooms
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice

Instructions

  1. Start by placing the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
  2. In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
  3. Dredge each chicken breast in the flour mixture, coating both sides thoroughly. Shake off excess flour and set aside.
  4. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be no longer pink.
  5. Remove the chicken from the skillet and cover loosely with aluminum foil to keep warm.
  6. In the same skillet, add the sliced mushrooms and sauté for about 3-4 minutes until tender.
  7. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  8. After simmering for 2-3 minutes, reduce heat to low and stir in the heavy cream. Simmer gently for another 5 minutes, stirring occasionally.
  9. Add the grated Parmesan cheese to the sauce, stirring until melted and slightly thickened. Adjust consistency with more chicken broth if needed.
  10. Stir in the lemon juice and season with additional salt and pepper to taste.
  11. To serve, place a chicken breast on each plate and spoon the creamy mushroom sauce over the top, including plenty of mushrooms.
  12. Garnish with freshly chopped parsley for added flavor and presentation.

Notes

  • For extra flavor, consider marinating the chicken in olive oil, lemon juice, garlic, and herbs before cooking.
  • For a lighter version, substitute half-and-half for the heavy cream.
