Description

Enjoy fluffy Chocolate Chip Oatmeal Pancakes that blend hearty rolled oats with sweet chocolate chips. Ideal for breakfast or brunch, these nutritious pancakes are a delicious way to kickstart your day!

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or whole wheat flour)
  • 2 tablespoons brown sugar (or maple syrup)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (semi-sweet or dark)
  • Optional toppings: sliced bananas, maple syrup, whipped cream, or additional chocolate chips

Instructions

  1. In a medium bowl, combine the rolled oats and milk. Let them soak for about 10-15 minutes to soften the oats.
  2. After soaking, add the egg, melted coconut oil (or butter), and vanilla extract to the bowl. Whisk until well combined.
  3. In a separate large bowl, mix together the all-purpose flour, brown sugar, baking powder, and salt. Ensure there are no lumps.
  4. Pour the wet mixture into the dry ingredients. Gently fold together using a spatula or wooden spoon, being careful not to overmix.
  5. Fold in the chocolate chips, adjusting the amount based on your preference.
  6. Heat a non-stick skillet or griddle over medium heat. Lightly grease with coconut oil or butter if desired.
  7. Sprinkle a few drops of water on the pan. If they sizzle and evaporate quickly, the pan is ready.
  8. Using a 1/4 cup measuring cup, pour the batter onto the skillet for each pancake, leaving space between them.
  9. Cook for about 2-3 minutes on the first side until bubbles form and edges look set.
  10. Carefully flip the pancakes and cook for another 1-2 minutes until golden brown. Keep cooked pancakes warm in a low oven if making a large batch.
  11. Stack the pancakes on a plate and serve immediately or keep warm in the oven.
  12. Top with sliced bananas, maple syrup, whipped cream, or more chocolate chips.
  13. Dig in and savor the deliciousness of these chocolate chip oatmeal pancakes!

Notes

  • Der Teig darf während der Ruhezeit nicht bewegt werden.
  • Für ein intensiveres Knoblaucharoma können mehr Zehen verwendet werden.
  • Don’t Overmix: A few lumps are fine; overmixing can lead to tough pancakes.
  • Adjusting Consistency: Add more milk if the batter is too thick, or more flour if too thin.
  • Experiment with Flavors: Feel free to add spices or fruits to customize your pancakes.
