- 1 cup of strong brewed coffee (cooled)
- 1 cup of heavy cream
- 1 cup of semi-sweet chocolate chips
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 2 large eggs
- 1/2 cup of all-purpose flour
- 1/2 teaspoon of baking powder
- 1/4 cup of cocoa powder
- Chocolate shavings or cocoa powder for garnish
Instructions
- In a medium saucepan, combine the heavy cream and chocolate chips over low heat. Stir continuously until the chocolate is completely melted and the mixture is smooth (about 5-7 minutes). Do not let it boil!
- Remove the saucepan from the heat and let it cool slightly.
- In a separate bowl, whisk together the granulated sugar, eggs, vanilla extract, and salt until light and fluffy (about 2-3 minutes).
- Gradually pour the warm chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.
- In another bowl, sift together the all-purpose flour, baking powder, and cocoa powder.
- Slowly add the dry ingredients to the chocolate mixture, folding gently with a spatula. Avoid overmixing.
- Set aside the cooled brewed coffee. Optionally, add a splash of coffee liqueur or a teaspoon of instant coffee granules for enhanced flavor.
- In a small bowl, mix a tablespoon of sugar into the coffee until dissolved.
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Pour half of the chocolate batter into the prepared cake pan, spreading it evenly.
- Gently pour the sweetened coffee over the chocolate batter.
- Pour the remaining chocolate batter on top of the coffee layer.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the cake cool in the pan for about 10 minutes, then invert it onto a wire rack to cool completely.
- Dust the top with cocoa powder or chocolate shavings for garnish.
- Slice and serve!
