Instructions

  1. In a medium mixing bowl, combine 1 cup of creamy peanut butter, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract. Use a spatula to mix well.
  2. Mix until smooth and thick, using a hand mixer or a wooden spoon.
  3. Set the mixture aside for assembly.
  4. In a microwave-safe bowl, add 1 1/2 cups of semi-sweet chocolate chips and 1 tablespoon of coconut oil (if using).
  5. Microwave in 30-second intervals, stirring in between, until melted and smooth (about 1.5 to 2 minutes total).
