Instructions
- In a medium saucepan, combine the water, unsalted butter, granulated sugar, and salt. Place over medium heat and bring to a gentle boil, stirring occasionally until the butter melts.
- Remove from heat and immediately add the all-purpose flour. Stir vigorously with a wooden spoon until the dough forms a ball, about 1-2 minutes.
- Allow the dough to cool for about 5 minutes to prevent cooking the eggs.
- Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Mix in the vanilla extract and ground cinnamon for added flavor.
- In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a candy thermometer or drop a small piece of dough into the oil to check readiness.
- Prepare a piping bag fitted with a large star tip, or use a zip-top bag with the corner snipped off. Fill with churro dough, squeezing out air bubbles.
- Pipe small pieces of dough (1-2 inches long) into the hot oil, cutting with scissors. Fry in batches to avoid overcrowding.
- Fry for 2-3 minutes on each side until golden brown and puffed. Use a slotted spoon to turn occasionally.
- Remove from oil and place on paper towels to drain excess oil.
- In a shallow dish, mix 1 cup of granulated sugar with 1/2 teaspoon of ground cinnamon. Roll warm churros poppers in the mixture until fully coated.
- Arrange on a serving platter. Drizzle with chocolate or caramel sauce if desired. Serve warm with additional dipping sauces on the side.
