Instructions

  1. In a medium saucepan, combine the water, unsalted butter, granulated sugar, and salt. Place over medium heat and bring to a gentle boil, stirring occasionally until the butter melts.
  2. Remove from heat and immediately add the all-purpose flour. Stir vigorously with a wooden spoon until the dough forms a ball, about 1-2 minutes.
  3. Allow the dough to cool for about 5 minutes to prevent cooking the eggs.
  4. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  5. Mix in the vanilla extract and ground cinnamon for added flavor.
  6. In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a candy thermometer or drop a small piece of dough into the oil to check readiness.
  7. Prepare a piping bag fitted with a large star tip, or use a zip-top bag with the corner snipped off. Fill with churro dough, squeezing out air bubbles.
  8. Pipe small pieces of dough (1-2 inches long) into the hot oil, cutting with scissors. Fry in batches to avoid overcrowding.
