  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable or chicken broth
  • 1 tablespoon fish sauce (optional)
  • 1 tablespoon lime juice
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Instructions

  1. In a large pot or deep skillet, heat the coconut oil over medium heat. Once hot, add the finely chopped onion. Sauté for about 5-7 minutes until translucent and slightly golden.
  2. Add the minced garlic, grated ginger, and slit green chilies. Stir and cook for another 2-3 minutes until fragrant.
  3. Sprinkle in the turmeric, coriander, and cumin powders. Stir well to coat the onion mixture and cook for 1-2 minutes to release the spices’ essential oils.
  4. Pour in the coconut milk and stir into the onion and spice mixture, creating a creamy sauce.
  5. Add the vegetable or chicken broth and stir until well combined.
  6. If using, add the fish sauce for an umami boost. Bring the mixture to a gentle simmer and let it cook for about 10 minutes.
  7. Carefully add the prawns to the pot, ensuring they are evenly distributed in the sauce.
