- 4 everything bagels
- 8 oz ribeye steak (or your preferred cut)
- 4 large eggs
- 4 slices of American cheese (or cheese of your choice)
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Butter, for toasting bagels
- Optional: hot sauce or ketchup for serving
Instructions
- Start by taking the ribeye steak out of the refrigerator and allowing it to come to room temperature for about 30 minutes.
- While the steak is resting, season both sides generously with salt and pepper.
- Heat a skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil and let it heat until shimmering.
- Once the oil is hot, carefully place the steak in the pan. Sear the steak for about 4-5 minutes on one side without moving it.
- Flip the steak and cook for an additional 3-4 minutes for medium-rare, or longer if you prefer it more well done.
- Once cooked to your liking, remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
- After resting, slice the steak thinly against the grain.
- In the same skillet used for the steak, reduce the heat to medium. If needed, add a little more olive oil or butter to the pan.
- Crack the eggs into a bowl and whisk them lightly with a pinch of salt and pepper.
- Pour the whisked eggs into the skillet. Allow them to cook undisturbed for about 30 seconds until they start to set around the edges.
- Using a spatula, gently stir the eggs, pushing them from the edges toward the center. Continue to cook, stirring occasionally, until the eggs are just set but still slightly runny.
- Once the eggs are cooked to your desired doneness, remove them from the heat.
- While the eggs are cooking, slice the everything bagels in half.
- In a separate skillet or toaster, toast the bagel halves until they are golden brown and crispy.
- Once toasted, remove the bagels from the heat and set them aside.
- Take the bottom half of each toasted bagel and place a generous portion of the sliced steak on top.
- Next, add a portion of the scrambled eggs (with or without melted cheese) on top of the steak.
- Finish by placing the top half of the bagel over the eggs.
- Repeat the assembly process for the remaining bagels until all ingredients are used up.
Notes
- Feel free to customize the cheese or add additional toppings like avocado or sautéed vegetables for extra flavor.
- These bagels are best served immediately while warm.
