  • 4 everything bagels
  • 8 oz ribeye steak (or your preferred cut)
  • 4 large eggs
  • 4 slices of American cheese (or cheese of your choice)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Butter, for toasting bagels
  • Optional: hot sauce or ketchup for serving

Instructions

  1. Start by taking the ribeye steak out of the refrigerator and allowing it to come to room temperature for about 30 minutes.
  2. While the steak is resting, season both sides generously with salt and pepper.
  3. Heat a skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil and let it heat until shimmering.
  4. Once the oil is hot, carefully place the steak in the pan. Sear the steak for about 4-5 minutes on one side without moving it.
  5. Flip the steak and cook for an additional 3-4 minutes for medium-rare, or longer if you prefer it more well done.
  6. Once cooked to your liking, remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
  7. After resting, slice the steak thinly against the grain.
  8. In the same skillet used for the steak, reduce the heat to medium. If needed, add a little more olive oil or butter to the pan.
  9. Crack the eggs into a bowl and whisk them lightly with a pinch of salt and pepper.
  10. Pour the whisked eggs into the skillet. Allow them to cook undisturbed for about 30 seconds until they start to set around the edges.
  11. Using a spatula, gently stir the eggs, pushing them from the edges toward the center. Continue to cook, stirring occasionally, until the eggs are just set but still slightly runny.
  12. Once the eggs are cooked to your desired doneness, remove them from the heat.
  13. While the eggs are cooking, slice the everything bagels in half.
  14. In a separate skillet or toaster, toast the bagel halves until they are golden brown and crispy.
  15. Once toasted, remove the bagels from the heat and set them aside.
  16. Take the bottom half of each toasted bagel and place a generous portion of the sliced steak on top.
  17. Next, add a portion of the scrambled eggs (with or without melted cheese) on top of the steak.
  18. Finish by placing the top half of the bagel over the eggs.
  19. Repeat the assembly process for the remaining bagels until all ingredients are used up.

  • Feel free to customize the cheese or add additional toppings like avocado or sautéed vegetables for extra flavor.
