Instructions

  1. Prepare the Chicken: Pat the chicken cubes dry with paper towels. In a medium bowl, toss the chicken cubes with salt, pepper, and Italian seasoning. Ensure each piece is evenly coated.
  2. Sear the Chicken: Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken to the skillet in a single layer (cook in batches if needed). Sear for 3-4 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside.
  3. Make the Garlic Cream Sauce: In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant (be careful not to burn). Sprinkle the flour over the garlic and butter mixture. Whisk constantly for about 1 minute to create a roux.
