  • Author: Maria
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

Enjoy a quick and creamy Salmon Alfredo Fettuccine, featuring tender salmon fillet and rich Alfredo sauce enveloping al dente fettuccine. Perfect for weeknight dinners or special occasions, this dish is both delicious and easy to prepare.

Ingredients

Scale
  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillet, skinless
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
  2. Add the fettuccine pasta to the boiling water. Cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
  3. Reserve about 1 cup of pasta water, then drain the pasta in a colander and set aside.
  4. Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat for about a minute.
  6. Place the salmon in the skillet and cook for 4-5 minutes on one side. Flip and cook for an additional 3-4 minutes until it flakes easily. Remove from skillet and set aside.
  7. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  8. Pour in 1 cup of heavy cream, stirring to combine. Simmer gently for 2-3 minutes.
  9. Gradually whisk in 1 cup of grated Parmesan cheese until melted and creamy. Add reserved pasta water if the sauce is too thick.
  10. Stir in 1 teaspoon of Italian seasoning and 1 tablespoon of lemon juice. Adjust seasoning with salt and pepper.
  11. Flake the cooked salmon into bite-sized pieces.
  12. Add the drained fettuccine to the skillet with the Alfredo sauce and toss to coat.
  13. Gently fold in the flaked salmon, adding more reserved pasta water if needed for creaminess.
  14. Twirl the creamy salmon Alfredo pasta onto plates or into bowls.
  15. Sprinkle with freshly chopped parsley and extra Parmesan cheese if desired.
  16. Serve immediately while hot and creamy, paired with a side salad or garlic bread.

Notes

  • Choosing Salmon: Fresh salmon is ideal, but frozen salmon can be used if thawed completely.
