- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped

- 1/2 teaspoon red pepper flakes (optional)
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 12 oz fettuccine pasta
- Fresh basil leaves for garnish
Instructions
- Cook the Italian Sausage:
- Remove the sausage from its casing and crumble it into a large skillet over medium-high heat.
- Cook the sausage, breaking it up with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.
- Prepare the Sauce:
- Heat olive oil in the same skillet over medium heat.
- Add the chopped onion and garlic, sauté until softened and fragrant.
- Stir in the sun-dried tomatoes, dried basil, dried oregano, and red pepper flakes if using. Cook for another minute.
- Pour in the chicken broth and bring to a simmer.
- Reduce heat to low and stir in the heavy cream and Parmesan cheese. Simmer gently until the sauce thickens slightly.
- Season with salt and pepper to taste.
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the fettuccine pasta according to package instructions until al dente.
- Drain the pasta, reserving a cup of pasta water.
- Combine and Serve:
- Add the cooked sausage to the sauce in the skillet and stir to combine.
- Add the cooked fettuccine to the skillet and toss to coat the pasta in the creamy sauce.
- If the sauce is too thick, add a little pasta water to loosen it up.
- Simmer for a couple of minutes to let the flavors meld together.
- Serve the creamy Tuscan sausage pasta hot, garnished with fresh basil leaves and extra Parmesan cheese if desired.
