- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (226g) unsalted butter, softened
- 1 3/4 cups (350g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (240ml) plain Greek yogurt (full-fat recommended)
- 1/2 cup (120ml) milk
- 1/2 cup (100g) granulated sugar
- 1/2 cup (120ml) water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup (120g) powdered sugar
- 2–3 tablespoons milk or lemon juice (adjust for desired consistency)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes). Scrape down the sides of the bowl.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Scrape down the sides of the bowl.
- Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt and milk. Begin and end with the dry ingredients. Mix on low speed until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
