- 8 small corn tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped (optional)
- 1 lime, cut into wedges
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes until translucent and fragrant.
- Add the minced garlic and cook for an additional minute, stirring frequently.
- Add the ground beef, breaking it up with a wooden spoon. Cook for 5-7 minutes until browned and no longer pink, stirring occasionally.
- Drain any excess fat from the skillet to prevent greasy tacos.
- Sprinkle taco seasoning over the beef, pour in the water, and stir until well combined. Simmer for about 5 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper as needed.
- In a separate skillet, heat a small amount of oil over medium heat.
- Add one tortilla at a time, cooking for about 30 seconds on each side until warm and slightly crispy. Remove and place on a paper towel-lined plate.
- Repeat for all tortillas, frying longer for extra crispiness if desired.
- Take a crispy tortilla and place it on a plate.
- Spoon a generous amount of the seasoned beef mixture into the center.
- Sprinkle shredded cheddar cheese over the beef.
- Add shredded lettuce and diced tomatoes on top.
- Finish with a dollop of sour cream and chopped cilantro if using.
- Repeat the assembly for the remaining tortillas and filling.
- Arrange the assembled tacos on a platter or individual plates.
- Garnish with lime wedges for squeezing over the tacos.
- Serve with additional toppings like sliced jalapeños, avocado slices, or extra cheese on the side.
