Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened to room temperature
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Sprinkles or colored sugar (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Mix in the egg, vanilla extract, and almond extract (if using) until just combined.
  5. Gradually add the dry mixture to the wet ingredients in three parts, mixing on low speed until just combined.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Line two baking sheets with parchment paper.
  8. Use a cookie scoop or tablespoon to portion out the dough, rolling each into a ball and placing them on the baking sheets with 2 inches of space between each.
  9. Gently press down on each cookie ball to flatten slightly.
  10. Bake for 10-12 minutes, or until edges are lightly golden.
  11. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  12. In a medium bowl, combine powdered sugar, milk, and vanilla extract, beating until smooth and creamy.
  13. Spread a generous layer of frosting on each cooled cookie.
  14. While the frosting is still wet, add sprinkles or colored sugar on top.
  15. Place the frosted cookies in the refrigerator for about 30 minutes to set the frosting.

Notes

  • For a richer flavor, consider adding the optional almond extract.
  • Ensure the cookies are completely cool before frosting to prevent the frosting from melting.
