Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
- Mix in the egg, vanilla extract, and almond extract (if using) until just combined.
- Gradually add the dry mixture to the wet ingredients in three parts, mixing on low speed until just combined.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Line two baking sheets with parchment paper.
- Use a cookie scoop or tablespoon to portion out the dough, rolling each into a ball and placing them on the baking sheets with 2 inches of space between each.
- Gently press down on each cookie ball to flatten slightly.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
- In a medium bowl, combine powdered sugar, milk, and vanilla extract, beating until smooth and creamy.
- Spread a generous layer of frosting on each cooled cookie.
- While the frosting is still wet, add sprinkles or colored sugar on top.
- Place the frosted cookies in the refrigerator for about 30 minutes to set the frosting.
