Instructions
- In a medium saucepan, combine the whole milk and heavy cream. Place the saucepan over medium heat and stir occasionally until the mixture is hot but not boiling. You should see steam rising from the surface.
- While the milk and cream are heating, in a separate bowl, whisk together the granulated sugar, salt, and cornstarch until well combined.
- In another bowl, whisk the egg yolks until they are pale and slightly thickened, about 2 minutes. Gradually add the sugar mixture to the egg yolks, whisking continuously to prevent the eggs from cooking.
- Once the milk and cream mixture is hot, slowly pour about one cup of the hot liquid into the egg yolk mixture, whisking constantly.
- After tempering the egg yolks, pour the entire mixture back into the saucepan with the remaining milk and cream. Stir in the vanilla extract.
- Place the saucepan back on the stove over medium heat. Cook the custard mixture, stirring constantly with a wooden spoon or a heat-resistant spatula.
- Continue cooking until the custard thickens and coats the back of the spoon, about 8-10 minutes.
- Once thickened, remove the saucepan from the heat. If you notice any lumps, strain the custard through a fine-mesh sieve into a clean bowl.
- Let the custard cool for about 10 minutes at room temperature, then cover the surface with plastic wrap to prevent a skin from forming. Refrigerate the custard for at least 2 hours, or until completely chilled.
- Once the custard is chilled, give it a gentle stir to smooth it out. Serve the custard in individual ramekins, bowls, or a large serving dish.
- If desired, layer the custard with your choice of toppings.
- For a more decadent dessert, consider adding a dollop of whipped cream on top of each serving.
