  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • Juice of 1 large orange
  • ½ teaspoon salt
  • 1 cup powdered sugar (for drizzle)
  • 23 tablespoons orange juice (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or non-stick spray, and optionally line the bottom with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  5. Beat in the eggs one at a time, then mix in the vanilla extract until smooth.
  6. Add the orange zest and juice to the butter mixture.
  7. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  11. In a small bowl, whisk together the powdered sugar and 2-3 tablespoons of orange juice until smooth. Adjust the consistency as needed.
  12. Adjust the flavor by adding more zest or juice if desired.
  13. Once the cake is cool, drizzle the orange glaze over the top, allowing it to drip down the sides.
  14. Allow the drizzle to set for 10-15 minutes before slicing.
  15. Cut the cake into slices and serve as is or with whipped cream or vanilla ice cream.
