Description
This Scallion Chicken stir-fry features tender chicken strips in a savory sauce made with soy sauce, oyster sauce, and sesame oil. Quick to prepare and perfect with rice or noodles, it’s a flavorful dish that can be customized with your favorite vegetables.

- 4 boneless, skinless chicken breasts
- 1 cup scallions (green onions), chopped
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- Start by rinsing the chicken breasts under cold water. Pat them dry with paper towels to remove excess moisture.
- Using a sharp knife, slice each chicken breast into thin strips, about 1 inch wide.
- In a medium bowl, combine the sliced chicken with 1 tablespoon of soy sauce, a pinch of salt, and a dash of pepper. Mix well and let it marinate for about 15-20 minutes.
- In a separate bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, and chicken broth.
- Add the minced garlic and ginger to the sauce mixture and stir well.
- In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken strips to the skillet in a single layer. Cook for about 4-5 minutes, stirring occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
- Remove the chicken from the skillet and set aside, covering it with aluminum foil to keep warm.
- In the same skillet, add the chopped scallions and sauté for about 1-2 minutes until tender but still vibrant green.
- Return the cooked chicken to the skillet with the scallions and pour the sauce mixture over them.
- Stir to coat the chicken and scallions with the sauce, then bring to a simmer over medium heat for about 2-3 minutes.
- Add the cornstarch slurry and stir continuously for about 1-2 minutes until the sauce thickens. If too thick, add more chicken broth to loosen.
- Taste and adjust seasoning if necessary, adding more soy sauce or salt if desired.
- Remove from heat and let sit for a minute.
- Serve the scallion chicken over cooked rice or noodles, spooning sauce over the top. Garnish with additional chopped scallions if desired.

- For added flavor, consider marinating the chicken for a longer period, up to 2 hours, in the refrigerator.
