  • 1 cup scallions (green onions), chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Start by rinsing the chicken breasts under cold water. Pat them dry with paper towels to remove excess moisture.
  2. Using a sharp knife, slice each chicken breast into thin strips, about 1 inch wide.
  3. In a medium bowl, combine the sliced chicken with 1 tablespoon of soy sauce, a pinch of salt, and a dash of pepper. Mix well and let it marinate for about 15-20 minutes.
  4. In a separate bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, and chicken broth.
  5. Add the minced garlic and ginger to the sauce mixture and stir well.
  6. In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry. Set aside.
  7. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  8. Add the marinated chicken strips to the skillet in a single layer. Cook for about 4-5 minutes, stirring occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  9. Remove the chicken from the skillet and set aside, covering it with aluminum foil to keep warm.
  10. In the same skillet, add the chopped scallions and sauté for about 1-2 minutes until tender but still vibrant green.
  11. Return the cooked chicken to the skillet with the scallions and pour the sauce mixture over them.
  12. Stir to coat the chicken and scallions with the sauce, then bring to a simmer over medium heat for about 2-3 minutes.
  13. Add the cornstarch slurry and stir continuously for about 1-2 minutes until the sauce thickens. If too thick, add more chicken broth to loosen.
  14. Taste and adjust seasoning if necessary, adding more soy sauce or salt if desired.
  15. Remove from heat and let sit for a minute.
  16. Serve the scallion chicken over cooked rice or noodles, spooning sauce over the top. Garnish with additional chopped scallions if desired.
