  • 2 large eggs

  • 2 tablespoons of vegetable oil (or sesame oil)
  • 2 green onions, finely chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon of sesame seeds (optional)

Instructions

  1. Cook the rice according to package instructions, preferably using day-old rice that has been cooled in the fridge overnight.
  2. Chop the mixed vegetables into small, uniform pieces.
  3. Crack the eggs into a bowl and whisk until fully combined, adding a pinch of salt.
  4. Peel and finely mince the garlic cloves.
  5. Slice the green onions, separating the white parts from the green tops.
  6. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  7. Add the minced garlic and the white parts of the green onions to the hot oil and sauté for about 30 seconds until fragrant.
  8. Toss in the chopped mixed vegetables and stir-fry for about 2-3 minutes until tender but still crisp.
  9. Push the vegetables to one side of the skillet, pour the whisked eggs into the empty side, and scramble until fully cooked, then mix with the vegetables.
  10. Break up any clumps of rice and add it to the skillet, stirring everything together until well mixed.
  11. Pour the soy sauce over the rice mixture and stir well, adjusting seasoning with salt and pepper as needed.
  12. Continue to stir-fry the rice for another 3-5 minutes, ensuring it gets a nice texture and flavor.
  13. Stir in the green tops of the onions for a fresh burst of flavor.
  14. If using sesame seeds, sprinkle them over the top and serve hot as a main dish or side.
