This Egg Roll Stir Fry features savory ground pork (or your choice of protein) combined with fresh vegetables and a flavorful sauce, all in a quick and easy dish. It’s a healthier alternative to traditional egg rolls, perfect for a weeknight dinner, and can be served over rice or noodles for a satisfying meal.

Ingredients

Scale
  • 1 pound ground pork (or chicken, turkey, or tofu)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 cup shredded carrots
  • 1 cup shredded green cabbage
  • 1 cup bean sprouts
  • 1/2 cup green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or vegetarian oyster sauce)
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Start by gathering all your ingredients. This will make the cooking process smoother and more efficient.
  2. Wash and chop the green onions, setting aside the white parts for cooking and the green parts for garnish.
  3. Peel and mince the garlic and ginger. Set them aside in a small bowl.
  4. Shred the carrots and cabbage if not pre-shredded. You can use a box grater or a food processor for this task.
  5. Measure out the soy sauce, oyster sauce, sesame oil, rice vinegar, black pepper, and red pepper flakes into a small bowl. This will be your sauce mixture.
  6. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  7. Add the ground pork (or your chosen protein) to the skillet. Use a spatula to break it apart as it cooks.
  8. Cook the meat for about 5-7 minutes, or until it is browned and cooked through. Make sure to stir occasionally to ensure even cooking.
  9. Once the meat is cooked, drain any excess fat if necessary. This will help keep the dish from becoming greasy.
  10. With the meat still in the skillet, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  11. Add the shredded carrots and cabbage to the skillet. Stir well to combine with the meat and aromatics.
  12. Continue to stir-fry the mixture for about 3-4 minutes, or until the vegetables are tender but still crisp.
  13. Next, add the bean sprouts and the white parts of the green onions. Stir-fry for an additional 1-2 minutes until the bean sprouts are heated through.
  14. Pour the prepared sauce mixture over the stir-fried ingredients in the skillet.
  15. Stir well to ensure that all the ingredients are evenly coated with the sauce.
  16. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and the flavors to meld together.
  17. Adjust seasoning if necessary, adding more soy sauce or pepper to taste.
  18. Once the stir fry is cooked to your liking, remove the skillet from heat.
  19. Transfer the stir fry to a serving dish or individual bowls.
  20. Garnish with the reserved green parts of the green onions and sprinkle sesame seeds on top for added crunch and flavor.
  21. Serve the egg roll stir fry over cooked rice or noodles, allowing each person to customize their serving as desired.

Notes

  • Feel free to customize the vegetables based on your preference or what you have on hand.
  • For a spicier kick, increase the amount of red pepper flakes or add a dash of hot sauce.
