  • 1 tablespoon baking powder
  • 1 teaspoon baking soda

  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup buttermilk, cold
  • 2 tablespoons honey
  • Extra flour for dusting
  • Butter for brushing (optional)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk until well mixed.
  2. Add the cold, cubed butter to the flour mixture. Cut the butter into the flour until it resembles coarse crumbs.
  3. In a separate bowl, mix the cold buttermilk and honey until the honey is dissolved.
  4. Pour the buttermilk mixture into the flour mixture and stir gently until just combined.
  5. Lightly flour your work surface and turn the dough out onto it. Pat the dough into a rectangle about 1-inch thick.
  6. Fold the dough in half and pat it down again to about 1-inch thick. Repeat this folding and patting process two more times.
  7. Roll the dough out to about 1-inch thick one last time and cut out biscuits using a biscuit cutter or glass.
  8. Preheat your oven to 425°F (220°C). Brush the tops of the biscuits with melted butter if desired.
  9. Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown.
  10. Let the biscuits cool on the baking sheet for a few minutes before transferring to a wire rack.
