Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well blended.
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
- In a separate bowl, mix the pumpkin puree, buttermilk, and brown sugar until smooth.
- Pour the pumpkin mixture into the dry ingredients and gently fold until just combined. Avoid overmixing.
- Lightly flour your work surface and turn the dough out onto it.
- Gently knead the dough a few times until it comes together, about 5-6 turns.
- Roll the dough out to about 1-inch thickness.
- Use a biscuit cutter or glass to cut out rounds, placing them on a parchment-lined baking sheet.
- Gather scraps, knead gently, and roll out again to cut more biscuits.
- Brush the tops of the biscuits with beaten egg for a golden finish (optional).
- Bake in the preheated oven for 12-15 minutes, or until golden brown.
- Remove from the oven and let cool on the baking sheet for about 5 minutes.
- Move the biscuits to a wire rack to cool completely.
- Serve warm with butter, honey, or jam.
