- 3 cups peeled and diced apples
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans (optional)
- 1 cup raisins (optional)

Instructions
- Preheat your oven to 350°F (175°C).
- Wash, peel, core, and dice the apples into small pieces (about 1/2 inch). Set aside.
- In a large mixing bowl, combine granulated sugar and brown sugar. Mix in vegetable oil until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the diced apples, and if desired, add nuts and raisins.
- Grease and flour a 9×13 inch baking pan or two 9-inch round cake pans.
- Pour the batter into the prepared pan(s) and spread evenly.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
- Dust with powdered sugar if desired, slice, and serve. Enjoy with ice cream or whipped cream for an extra treat!
