Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash, peel, core, and dice the apples into small pieces (about 1/2 inch). Set aside.
  3. In a large mixing bowl, combine granulated sugar and brown sugar. Mix in vegetable oil until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  7. Fold in the diced apples, and if desired, add nuts and raisins.
  8. Grease and flour a 9×13 inch baking pan or two 9-inch round cake pans.
  9. Pour the batter into the prepared pan(s) and spread evenly.
  10. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
