  • Optional: 1/2 cup of vodka (for an extra kick)

Instructions

  1. In a small saucepan, combine 1 cup of granulated sugar and 1 cup of water. Place over medium heat and stir until the sugar completely dissolves. Bring to a gentle boil, then reduce heat and simmer for about 5 minutes. Remove from heat and allow to cool completely. Store any leftover syrup in an airtight container in the refrigerator for up to a month.
  2. Roll the lemons on the countertop to release juices. Cut in half and use a citrus juicer or reamer to extract the juice. Strain through a fine mesh sieve into a measuring cup to remove seeds and pulp, yielding about 1 cup of fresh lemon juice.
  3. In a blender, combine the lemon juice, limoncello, simple syrup, and ice cubes. If desired, add vodka for a stronger cocktail. Blend on high speed until smooth and slushy, stopping to scrape down the sides as needed.
  4. Taste the cocktail. If sweeter is preferred, add more simple syrup and blend again. If too sweet, balance with a splash of lemon juice.
  5. Chill serving glasses in the freezer for about 10 minutes. Pour the frozen cocktail into the glasses, filling them about three-quarters full. Garnish with a thin slice of lemon and fresh mint leaves.
