- 1 cup of freshly squeezed lemon juice (about 4–6 lemons)
- 1 cup of limoncello liqueur
- 1 cup of simple syrup (adjust to taste)
- 4 cups of ice cubes
- 1 lemon, thinly sliced (for garnish)
- Fresh mint leaves (for garnish)
- Optional: 1/2 cup of vodka (for an extra kick)
Instructions
- In a small saucepan, combine 1 cup of granulated sugar and 1 cup of water. Place over medium heat and stir until the sugar completely dissolves. Bring to a gentle boil, then reduce heat and simmer for about 5 minutes. Remove from heat and allow to cool completely. Store any leftover syrup in an airtight container in the refrigerator for up to a month.
- Roll the lemons on the countertop to release juices. Cut in half and use a citrus juicer or reamer to extract the juice. Strain through a fine mesh sieve into a measuring cup to remove seeds and pulp, yielding about 1 cup of fresh lemon juice.
- In a blender, combine the lemon juice, limoncello, simple syrup, and ice cubes. If desired, add vodka for a stronger cocktail. Blend on high speed until smooth and slushy, stopping to scrape down the sides as needed.
- Taste the cocktail. If sweeter is preferred, add more simple syrup and blend again. If too sweet, balance with a splash of lemon juice.
- Chill serving glasses in the freezer for about 10 minutes. Pour the frozen cocktail into the glasses, filling them about three-quarters full. Garnish with a thin slice of lemon and fresh mint leaves.
- Serve immediately with a straw or spoon. Enjoy the refreshing flavors, perfect for summer or as a delightful after-dinner treat.
