  • 6 cloves garlic, minced

  • 1 teaspoon sugar
  • 2 green onions, chopped
  • 1 lb. boneless, skinless chicken thighs or breasts
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon vegetable oil
  • Chopped green onions for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. In a medium bowl, combine the soy sauce, mirin, brown sugar, rice vinegar, and grated ginger. Whisk until the sugar is dissolved.
  2. Add the chicken to the marinade, ensuring it is well coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Remove the chicken from the fridge and let it sit at room temperature for about 10 minutes before cooking.
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Add the marinated chicken to the pan and cook for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  6. Pour the remaining marinade into a small saucepan, bring to a boil, then reduce heat and simmer for about 5 minutes until thickened.
  7. Remove the chicken from the pan, let it rest for a few minutes, then slice into bite-sized pieces.
  8. Drizzle the thickened teriyaki sauce over the sliced chicken and toss to coat.
  9. Bring a large pot of salted water to a boil. Cook the spaghetti or egg noodles according to package instructions until al dente. Drain and set aside.
  10. In the same pot, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  11. Add the cooked noodles back into the pot with the garlic butter. Pour in soy sauce, oyster sauce, sesame oil, and sugar. Toss until well coated and heated through (about 2-3 minutes).
  12. Stir in chopped green onions and mix well. Optionally, sprinkle sesame seeds on top.
  13. On a serving platter or individual plates, place a generous portion of garlic noodles as the base.
  14. Top with sliced teriyaki chicken and drizzle any remaining sauce over the top.
