- 2 large grapefruits
- 1 cup of granulated sugar
- 1 cup of water
- 1 cup of sparkling water (or club soda)
- Fresh mint leaves (for garnish)
- Ice cubes

Instructions
- Wash the grapefruits under cool running water.
- Cut each grapefruit in half horizontally.
- Juice each half using a citrus juicer or by hand, being careful of seeds.
- Strain the juice through a fine mesh sieve to remove pulp and seeds.
- In a small saucepan, combine 1 cup of sugar and 1 cup of water over medium heat.
- Stir until the sugar dissolves (about 3-5 minutes), then cool the syrup.
- In a large pitcher, combine the grapefruit juice with the cooled simple syrup and stir well.
- Add the sparkling water and stir gently to combine.
- Fill tall glasses with ice cubes and pour the grapefruit soda mixture over the ice.
- Garnish with fresh mint leaves and optional lime wedges, then serve and enjoy!
