This Grilled Chicken with Greek Yogurt Marinade is a juicy and flavorful dish that combines tangy yogurt with aromatic spices, making it perfect for summer grilling. Easy to prepare, it pairs beautifully with a refreshing yogurt sauce and fresh herbs, offering a delightful burst of flavor with every bite.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Fresh herbs (such as parsley or cilantro) for garnish
  • Lemon wedges for serving

Instructions

  1. In a medium-sized mixing bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, ground cumin, smoked paprika, salt, black pepper, and cayenne pepper (if using).
  2. Whisk the ingredients together until they are well combined and form a smooth marinade.
  3. Taste the marinade and adjust the seasoning if necessary.
  4. Place the chicken breasts in a large resealable plastic bag or a shallow dish.
  5. Pour the yogurt marinade over the chicken, ensuring that each piece is thoroughly coated.
  6. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 1 hour, but for best results, marinate for 4 to 6 hours or overnight.
  7. About 30 minutes before you are ready to grill, remove the chicken from the refrigerator to allow it to come to room temperature.
  8. Preheat your grill to medium-high heat (about 375°F to 450°F).
  9. Lightly oil the grill grates with a paper towel dipped in vegetable oil.
  10. Once the grill is hot, remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.
  11. Place the chicken breasts on the grill, ensuring they are spaced apart.
  12. Grill the chicken for about 6 to 7 minutes on one side without moving it.
  13. Flip the chicken breasts using tongs and grill for an additional 6 to 7 minutes on the other side.
  14. The chicken is done when it reaches an internal temperature of 165°F (75°C).
  15. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  16. In a small bowl, take 1 cup of plain Greek yogurt.
  17. Add a pinch of salt and a squeeze of lemon juice to the yogurt.
  18. Mix until well combined and adjust seasoning as needed.
  19. After the chicken has rested, slice it into strips or serve it whole.
  20. On a plate, arrange the grilled chicken and drizzle the prepared yogurt sauce over the top.
  21. Garnish with fresh herbs and serve with lemon wedges on the side.
