Ingredients

Scale
  • 2 pounds of steak tips (sirloin or flank steak)
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine the olive oil, soy sauce, Worcestershire sauce, and red wine vinegar. Whisk until well blended.
  2. Add the minced garlic, Dijon mustard, brown sugar, black pepper, salt, smoked paprika, oregano, and thyme. Whisk again until fully incorporated. Adjust seasoning to taste.
  3. Place the steak tips in a large resealable plastic bag or shallow dish. Pour the marinade over the steak tips, ensuring they are well coated.
  4. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 1 hour, preferably 4 to 6 hours, or overnight for best flavor.
  5. About 30 minutes before grilling, take the steak tips out of the refrigerator to come to room temperature.
  6. Preheat your grill to medium-high heat. For charcoal, ensure coals are hot and ashy; for gas, preheat for 10-15 minutes.
  7. Oil the grates with a paper towel dipped in vegetable oil to prevent sticking.
  8. Remove the steak tips from the marinade, allowing excess to drip off. Discard the leftover marinade.
  9. Place the steak tips on the hot grill, leaving space between each piece.
  10. Grill for about 4-5 minutes on one side without moving them for a nice sear.
  11. Flip the steak tips using tongs and grill for another 4-5 minutes for medium-rare. Add 2-3 minutes per side for more doneness.
  12. Check for doneness with a meat thermometer: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (65°C) for medium-well.
  13. Once done, remove from the grill and let rest for 5-10 minutes to allow juices to redistribute.
  14. Slice the steak tips against the grain into bite-sized pieces for tenderness.
  15. Arrange on a serving platter and garnish with freshly chopped parsley.
  16. Serve with your favorite sides, such as grilled vegetables, salad, or mashed potatoes, and consider a dipping sauce like chimichurri or spicy aioli.
