- 1/2 cup whole wheat flour

- 1/3 cup coconut oil, melted
- 1/3 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips or raisins (optional)
- 1/4 cup chopped nuts (walnuts or pecans, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir until well mixed.
- In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing.
- If using, fold in chocolate chips, raisins, or nuts.
- Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the sheet, spacing them about 2 inches apart. For flatter cookies, gently press down on each dough ball.
- Bake for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them as baking times may vary.
- Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them for up to 3 months.
- To freeze, place cookies in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag or container.
