This comforting Hobo Casserole features ground beef, diced potatoes, and green beans in a creamy mushroom sauce, all topped with melted cheddar cheese. It’s an easy, hearty dish perfect for family dinners or potlucks.

Ingredients

Scale
  • 1 pound ground beef
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 1 can (15 oz) green beans, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and dice the potatoes into 1-inch cubes. Chop the onion finely.
  3. Open the can of green beans and drain the liquid. Set aside.
  4. In a large skillet, heat olive oil over medium heat. Add ground beef, breaking it apart as it cooks. Stir until browned, about 5-7 minutes.
  5. Add chopped onion to the skillet and cook for an additional 3-4 minutes until translucent.
  6. Add garlic powder, onion powder, salt, pepper, and Worcestershire sauce (if using). Stir to combine.
  7. In a large bowl, combine diced potatoes with the beef and onion mixture. Toss gently to coat.
  8. Fold in the drained green beans.
  9. Pour the cream of mushroom soup over the mixture and stir until evenly coated.
  10. Grease a 9×13 inch baking dish with olive oil or cooking spray.
  11. Pour the mixture into the prepared baking dish and spread evenly.
  12. Sprinkle shredded cheddar cheese over the top.
  13. Cover the dish with aluminum foil to prevent burning.
  14. Bake in the preheated oven for 45 minutes.
  15. Remove the foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
  16. Ensure potatoes are tender. If not, bake for an additional 5-10 minutes.
  17. Let sit for 5 minutes, then garnish with fresh parsley if desired.
  18. Scoop onto plates and enjoy!
