Instructions
“`html
- In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk them together until well blended.
- In a separate bowl, whisk together the wet ingredients: buttermilk, egg, melted butter, and maple syrup until smooth.
- Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.
- Let the batter rest for about 5-10 minutes. This allows the baking powder to activate and will result in fluffier pancakes.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
- Once the skillet is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon to spread it into a round shape if necessary.
- Cook the pancakes for about 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancakes and cook for an additional 1-2 minutes on the other side until golden brown.
- Transfer the cooked pancakes to a plate and cover them with a clean kitchen towel to keep warm. Repeat the process with the remaining batter, greasing the skillet as needed.
- In a separate skillet, heat a small amount of butter or oil over medium heat.
- Add the sausage patties to the skillet. Cook for about 3-4 minutes on each side, or until they are browned and cooked through. If using bacon, cook until crispy.
- Once cooked, remove the sausage patties from the skillet and place them on a paper towel-lined plate to drain excess grease.
- In the same skillet used for the sausage, crack the eggs directly into the skillet. You can cook them sunny-side up, over-easy, or scrambled, depending on your preference.
- Season the eggs with a pinch of salt and pepper. Cook until the whites are set and the yolks are still runny, about 2-3 minutes for sunny-side up.
- In the last minute of cooking, place a slice of American cheese on top of each egg to melt slightly.
- Take one pancake and place it on a clean plate as the base of your sandwich.
- Layer a sausage patty on top of the pancake.
- Next, add the cheesy egg on top of the sausage patty.
- Finish with another pancake on top to create the sandwich.
- If desired, drizzle a little extra maple syrup over the top pancake for added sweetness.
- Repeat the assembly process for the remaining sandwiches.
