Instructions
- In a large bowl, pour in the buttermilk and add the chicken strips. Ensure all chicken is well-coated. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour, or up to overnight.
- In a separate bowl, combine flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Whisk until well mixed.
- After marinating, remove chicken from the refrigerator. Allow excess buttermilk to drip off, then dredge each strip in the flour mixture, ensuring full coverage. Place coated strips on a plate or wire rack and let sit for 10 minutes.
- In a small saucepan over medium heat, combine honey, chopped chipotle peppers, soy sauce, apple cider vinegar, and lime juice. Stir and bring to a gentle simmer. Cook for 5-7 minutes until the sauce thickens slightly, then remove from heat.
- In a large skillet or heavy-bottomed pot, heat enough vegetable oil to cover the bottom by about 1 inch over medium-high heat until it reaches 350°F (175°C). Test readiness by dropping a small piece of batter into the oil; it should sizzle.
- Carefully add the coated chicken strips in batches, avoiding overcrowding. Fry for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove and drain on paper towels.
- In a large mixing bowl, toss the fried chicken strips with the honey chipotle sauce until well coated. Adjust sauce quantity to taste.
