  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 large tortillas (flour or whole wheat)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped green onions
  • Optional: sour cream or ranch dressing for serving

Instructions

  1. In a medium bowl, combine the honey, soy sauce, minced garlic, olive oil, ground ginger, black pepper, and salt. Whisk until well blended.
  2. Cut the chicken breasts into bite-sized pieces for quicker cooking and better flavor absorption.
  3. Add the chicken pieces to the marinade, ensuring they are well coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes (or longer for enhanced flavor).
  4. Heat a large skillet over medium-high heat. Add the marinated chicken and all the marinade to the skillet.
  5. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink (internal temperature should reach 165°F/75°C).
  6. In a small bowl, mix the cornstarch and water to create a slurry.
  7. Once the chicken is cooked, reduce the heat to low and stir in the cornstarch slurry. Cook for an additional 2-3 minutes, stirring constantly, until the sauce thickens.
  8. Warm the tortillas in a dry skillet or microwave for 10-15 seconds to make them pliable.
  9. Lay a tortilla flat and add a generous scoop of the honey garlic chicken in the center.
  10. Top with shredded lettuce, diced tomatoes, shredded cheese, and chopped green onions.
  11. Fold the sides of the tortilla inwards, then roll from the bottom up to enclose the filling, tucking in the sides as you roll.
  12. Repeat with the remaining tortillas and filling.
